Part of the\u00a0first generation of food truck chefs in\u00a0Los Angeles, Medina, along with his wife\u00a0Lana, has harnessed the power of social\u00a0media to alert customers to their location\u00a0and devised an attention-grabbing\u00a0menu, including pulled pork sandwich\u00a0served with aioli, and homey sweet potato\u00a0hash.<\/p>\n<p><!--more--><\/p>\n<p><a href=\"https:\/\/i0.wp.com\/kareemcarts.com\/cart\/wp-content\/uploads\/2012\/03\/counter-culture.jpg\" rel=\"lightbox\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" title=\"counter culture\" src=\"https:\/\/i0.wp.com\/kareemcarts.com\/cart\/wp-content\/uploads\/2012\/03\/counter-culture-1024x749.jpg?resize=614%2C449\" alt=\"\" width=\"614\" height=\"449\" \/><\/a><\/p>\n<p>Medina&#8217;s cooking is Ecuadorian- <br \/>based, with Caribbean influences and the <br \/>sunny Californian style he picked up as <br \/>executive chef at Wolfgang Puck. &#8216;We just <br \/>wanted our own business and I thought <br \/>that a truck with a kitchen would be a <br \/>cheap and unstoppable way for us to <br \/>go out and show what we could offer.&#8217; <br \/>Once upon a time, apprentice chefs <br \/>spent their shifts sweating over a roux <br \/>and dreaming of opening their own <br \/>restaurant. These days, that dream is <br \/>becoming increasingly difficult to realise. <br \/>In London, a restaurant space with high <br \/>footfall could easily fetch \u00a3200 per sq ft <br \/>per annum, and in New York, $200. <br \/>As Puck puts it, &#8216;it&#8217;s always difficult for <br \/>a young chef to start a restaurant unless <br \/>one of his parents is a hedge fund manager. <br \/>Talent is one thing, but where do you get <br \/>the money to actually build a restaurant <br \/>these days?&#8217; No wonder then that so many <br \/>young chefs are recasting their ambitions<\/p>\n<p>in surprisingly inventive ways. Trucks are <br \/>just one route to financial and creative <br \/>freedom; street markets and out-of-hours <br \/>restaurant takeovers have also become <br \/>the strategies of the entrepreneurial chef <br \/>In the US, many budding young chefs <br \/>are literally taking their ideas to market <br \/>using food stalls as both culinary and <br \/>commercial test sites, often while working <br \/>in top kitchens. First came the Pop-Up <br \/>General Store market in Berkeley, <br \/>California, founded by two former Chez <br \/>Panisse kitchen alumni, Samin Nosrat<\/p>\n<p>and Christopher Lee. Now, food markets <br \/>such as Brooklyn&#8217;s Dekalb Market- a <br \/>lively mix of shops, cafes and restaurants <br \/>housed in salvaged shipping containers <br \/>&#8211; have become a new platform for <br \/>aspiring chefs hoping to make a name <br \/>for themselves, but without the usual <br \/>daunting financial outlay. At Dekalb, the <br \/>weekend rate for a zoft x 6ft space is just <br \/>$75. The resulting collection of food on <br \/>offer spans Robicelli&#8217;s decadent cupcakes, <br \/>Mazie&#8217;s Bites&#8217; soul food (see overleaf) and <br \/>Maharlika&#8217;s modern Filipino. <br \/>Elsewhere in Brooklyn, Eric Demby <br \/>and Jonathan Butler set up Smorgasburg <br \/>in Williamsburg, a Saturday food spin-off <br \/>of their very popular Sunday Brooklyn <br \/>Flea market, last May. &#8216;Food had been <br \/>an increasingly popular part of the Flea,&#8217; <br \/>Butler explains, &#8216;but we had reached a <br \/>capacity point. The artisanal food scene <br \/>was boiling over with talented cooks <br \/>wanting to try their own thing. Opening <br \/>Smorgasburg was a no-brainer.&#8217; For <br \/>Smorgasburg&#8217;s roo-odd farmers, cookware <br \/>sellers and chefs, it&#8217;s a low-cost way of <br \/>testing out their concepts on the 3,000 <br \/>to 5,000 gourmands who show up each <br \/>week. Given the amount of attention the <br \/>vendors tend to get from the press and <br \/>bloggers, it&#8217;s also been an effective way <br \/>to build buzz for their name and work. <br \/>Supper clubs, now an established <br \/>buzz-generating device, are still being <br \/>opened by young chefs in cities across\u00bb<\/p>\n<p>[\/one_half] [one_half_last]the world. A year ago, London-based <br \/>Martin Morales started a Twitter account <br \/>to test the interest in his native Peruvian <br \/>cuisine. The response was so positive he <br \/>began hosting a series of popular supper <br \/>clubs. Self-taught Morales is so confident <br \/>his cooking can develop a following he <br \/>is opening a standalone restaurant in <br \/>Soho this year. &#8216;I am part of a larger trend <br \/>of people saying &#8220;Let&#8217;s just stop talking <br \/>about it and start doing it&#8221;.&#8217; The events <br \/>make a little money, but the bigger <br \/>pay-off for Morales is that they are a <br \/>low-risk opportunity to test out recipes. <br \/>When his Ceviche restaurant opens, it <br \/>will boast the UK&#8217;s first pisco bar.<\/p>\n<p>Darren Robertson&#8217;s TOYS (Taste of <br \/>Young Sydney) is an Australian collective <br \/>of young chefs and waiters adopting a <br \/>similar tack. A trained chef, Robertson <br \/>is also the driving force behind The Table <br \/>Sessions, a series of guerrilla dining <br \/>events set in warehouses, galleries and <br \/>parks around Sydney. &#8216;The Table Sessions <br \/>give me creative freedom. I can explore, <br \/>and I get to work with interesting, <br \/>Wallpaper* <br \/>\u00a0<\/p>\n<p>talented people in unusual environments: <br \/>he says. Pop-Up General Store co-founder <br \/>Samin Nosrat makes pasta at Pizzaiolo, <br \/>an Oakland pizzeria, by day, and by night <br \/>burnishes her profile by taking over San <br \/>Francisco&#8217;s Tartine Bakery for monthly <br \/>blow-out gastro-fests. Canadian chef <br \/>Matthew Sullivan, formerly of The Fat <br \/>Duck, found a temporary home in<\/p>\n<p>a Queen West coffee shop for his Boxed <br \/>Toronto pop-up last summer. All are part <br \/>of a growing number of toe-dippers <br \/>sharing cooking and food retail spaces <br \/>(see box, right, for more examples).<\/p>\n<p>Despite the attractions of creative and <br \/>fiscal freestyling, though, most young <br \/>chefs still dream of opening their own, <br \/>permanent space. Several Smorgasburg <br \/>alumni have gone on to open eateries, <br \/>and this past October, Medina opened <br \/>Gastronomico, &#8216;a small place where<\/p>\n<p>we serve homemade bread and produce <br \/>from local farmers and butchers&#8217;, he says, <br \/>adding that &#8216;food is not a money-making <br \/>business.
